If you are looking for a new way to serve corn to your kids, have a look at Magali’s easy recipe. She got it from her son who learned how to prepare corn pancakes at school when he was about 6 years old. No doubt we can make it too!
What you need
For about 8 corn pancakes , 4″ in diameter.
- 10 oz corn (canned or frozen)
- 2 eggs
- salt, pepper
- 1/2 cup flour
- 1 tsp baking powder
- 1/4 cup grated cheese
- 1 TbS olive oil.
How to prepare your pancakes
1- Mix eggs, flour and baking soda, salt and pepper to your taste
2- Add the grated cheese, stir.
3- Finally add the drained corn, stir without crushing the corn.
You obtain a rather thick preparation, which is fine.
4- Drop spoonfuls of the mixture in a hot frying pan ( prefer medium heat and a large anti-adhesive frying pan with 1 table spoon of oil)
