Lentils in 5 Different Ways for Lucky Kid-Friendly School Lunches

Did you know that the lentils, with their coinlike shape, represent luck and prosperity? That culinary tradition is prevalent in Italy, especially to mark the New Year and wish friends and neighbors prosperity. If we’re not sure lentils would actually bring money, as these legumes are nutritious, they may bring somehow wealth (health is wealth, right?)!

1. Kid-friendly lentil soup

Unlike some other legumes, lentils cook relatively quickly, making them a convenient option for busy cooks like us, lunchbox families! In Indian cuisine, dal (lentil soup) is a common and beloved dish. Pack a lentil soup hot/warm in an insulated lunch box; this will become one of the best comfort foods your kids will have in wintertime!

2. Delicious red lentil curry

Lentils come in various colors, including green, brown, red, black, and yellow (“red”). Each variety has its own unique flavor and texture. Today, let’s virtually savor a red lentil curry! 3. French-style “Petit Salés” with green lentils

Lentils are used in a variety of ways, notably for the French dish “Petit Salé” with the famous “Lentilles du Puy” (green lentils from the Center of France). 

Our co-founder, Jessica, is French-American and she cooks very often “Petits Salés” for her kids: with pork sausage, duck sausage, pork, duck magret, and for vegetarian versions, with salmon, and with a hard-boiled egg.

Jessica’s tip, for getting super tasty lentils: cook them in a vegetable or a chicken broth! What Petit Salé would you prefer to have?
